19 - 2 tbsp kimchi, chopped
20 - 2 tbsp fresh cilantro or shiso leaves, chopped
21 - 1 tbsp sriracha mayo or gochujang mayo (optional)
22 - Lime wedges (optional)

# Steps:

01 - Combine gochujang, soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, and black pepper in a bowl. Add sliced beef and marinate for at least 20 minutes.
02 - Set oven temperature to 400°F (200°C).
03 - Heat a large skillet over medium-high heat. Sear the marinated beef in batches for 2 to 3 minutes until browned and cooked through. Set aside.
04 - Line a baking tray with parchment paper. Spread tortilla chips evenly, then layer half the shredded cheeses, followed by the cooked beef, and finish with remaining cheese.
05 - Place the tray in the oven and bake for 6 to 8 minutes until the cheese is bubbling and golden.
06 - Remove from oven and sprinkle with red onion, carrot, cucumber, scallions, red chili slices, and toasted sesame seeds.
07 - Top with chopped kimchi and fresh herbs. Drizzle with sriracha or gochujang mayo as desired. Serve with lime wedges.

# Expert Advice:

01 -
  • The gochujang beef brings a smoky, spicy depth that transforms basic nachos into something memorable.
  • You can assemble everything ahead and bake it just before serving, making entertaining feel less stressful.
  • It's shareable, customizable, and honestly just looks impressive without requiring fancy plating skills.
02 -
  • Don't skip the marinade time—the beef needs at least 20 minutes to absorb the flavors, and the gochujang paste needs time to break down and become tender when seared.
  • Add your fresh vegetables right after pulling from the oven; if you add them too early, they'll wilt, and if you wait too long, the cheese gets too firm to accept new toppings gracefully.
  • The difference between good and incredible is that drizzle of gochujang mayo at the very end—it brings cohesion to every bite.
03 -
  • Slice your beef against the grain for maximum tenderness—this matters more than perfect thickness.
  • Keep your oven and pan prepped before you start cooking the beef; you want to move quickly from skillet to baking tray without the beef cooling down.
